Susan's Maple Syrup Dressing:
Whisk together 1/3 cup maple syrup, 1/3 cup balsamic vinegar, 2 T Dijon mustard and 2/3 cup olive oil.

i am newly obsessed with maple syrup; and this is nice alternative to a honey mustard dressing.

I have also discovered that you can make equally delicious dressings, omitting the oil. You can substitute with juices; an alternative to the balsamic is rice wine vinegar. I just play around, often using a really fruity, low sugar 'jam' (check out the PC brands). Thanks for your comment!
